Palak Paneer

Ingredients:

  • 2 cups Shezan Palak (Spinach)
  • 200g paneer (Indian cottage cheese), cubed
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, chopped (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons cooking oil or ghee
  • Fresh cilantro leaves for garnish

Instructions:

  • Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
  • Add chopped onion and sauté until golden brown.
  • Add minced garlic, grated ginger, and chopped green chili (if using). Sauté for a minute.
  • Stir in the tomato puree and cook until the oil separates from the masala.
  • Add turmeric powder, red chili powder, and garam masala. Mix well.
  • Add Shezan Palak (Spinach) and mix until well combined with the masala. Cook for 5-7 minutes.
  • Add cubed paneer to the spinach mixture and gently stir to coat the paneer with the sauce.
  • Cover and cook for another 5 minutes, allowing the flavors to meld together.
  • Adjust salt to taste and sprinkle fresh cilantro leaves on top for garnish.
  • Serve hot with roti, naan, or rice.
