Palak Paneer
Ingredients:
- 2 cups Shezan Palak (Spinach)
- 200g paneer (Indian cottage cheese), cubed
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, chopped (optional)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons cooking oil or ghee
- Fresh cilantro leaves for garnish
Instructions:
- Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onion and sauté until golden brown.
- Add minced garlic, grated ginger, and chopped green chili (if using). Sauté for a minute.
- Stir in the tomato puree and cook until the oil separates from the masala.
- Add turmeric powder, red chili powder, and garam masala. Mix well.
- Add Shezan Palak (Spinach) and mix until well combined with the masala. Cook for 5-7 minutes.
- Add cubed paneer to the spinach mixture and gently stir to coat the paneer with the sauce.
- Cover and cook for another 5 minutes, allowing the flavors to meld together.
- Adjust salt to taste and sprinkle fresh cilantro leaves on top for garnish.
- Serve hot with roti, naan, or rice.
